Get started with home-scale cheesemaking and cultured milk products. Using raw milk from Aza’s family milk cow, and following more natural principles you can easily replicate at home, learn to make kefir and basic rennet cheese. As time allows, we will discuss recipes for lactic cheeses like chèvre/fromage blanc, how to turn your basic rennet cheese into mozzarella, and how to convert whey into ricotta.
This is a hands on class. There will be cheese to sample and participants can take some home as well!
